Delicious Slow Cooker Ranch Chicken Tacos

Ingredients
  

  • 1 pound skinless chicken breasts
  • 1 packet ranch seasoning mix
  • 1 packet taco seasoning mix
  • 1 cup chicken broth
  • 1 package soft taco tortillas use as many as you'd like!
  • Shredded cheese optional (for toppings)
  • Shredded lettuce optional (for toppings)
  • 1-3 Diced tomatoes optional (for toppings)
  • Sour cream optional (for toppings)
  • Salsa or hot sauce optional (for toppings)

Method
 

  1. Prepare the Chicken: Place the boneless, skinless chicken breasts in the slow cooker.
  2. Add Seasonings: Sprinkle the ranch seasoning mix and taco seasoning mix over the chicken.
  3. Add Liquid: Pour in the chicken broth (or water) to keep the chicken moist as it cooks.
  4. Cook: Cover the slow cooker and cook on low for about 6-8 hours or on high for 3-4 hours, until the chicken is tender and easily shreds with a fork.
  5. Shred the Chicken: Once cooked, shred the chicken directly in the slow cooker using two forks or a hand mixer for a quicker method. Mix it with the juices and seasonings for added flavor.
  6. Warm the Tortillas: While the chicken is cooking, warm the soft taco tortillas in a skillet or microwave.
  7. Assemble the Tacos: Spoon the shredded ranch chicken onto each tortilla.
  8. Add Toppings: Top with shredded cheese, lettuce, diced tomatoes, sour cream, salsa, or any other toppings you enjoy.
  9. Serve: Enjoy your delicious ranch chicken tacos with your favorite sides!

Notes

If you like your tacos with extra flavor, try adding a squeeze of fresh lime juice over the chicken before serving—it really brightens everything up. You can also make the chicken ahead of time and store it in the fridge for easy meal prep throughout the week. And don’t forget to toast your tortillas—it makes a huge difference in taste and texture!
